Kadai Chicken memoni style Ingredients cashew nut powder 25 gms Boneless chicken pieces (lightly fried) onion 1 large 4 Red chillies 4tbsp Raw cream 1 Big tomato 1/2 tsp saffron 1/4 cup oil 1/4 cup yoghurt 1/4 tsp food color 1 tsp onion seeds Masala to Grind 2 tbsp Fenugreek leaves 1 tomato 1 large onion 1/2 tsp salt 1/2 tbsp chilli powder 1/2 tbsp garlic chopped 1/2 tbsp garam masala 2 tsp coriander powder 1/2 tsp ginger chopped 1/2 tsp Turmeric powder 1 tsp jeera powder Method : Mix curd, cashew nut powder,saffron,fenugreek leaves and set aside. heat oil and fry kalonji add the whole chillies and fry. Add masala paste fry till oil seperates. Add chicken pieces fry for 5 minutes.Add 1/2 cup of water. cover and cook for 5 minutes. Achari rice platter Ingredients Mutton or chicken 1/2 kg Rice 1/2 kg curd 250 gm whole dhania 1 tsp birista 3/4 cup ginger 1 tsp garlic 1 tsp green chilli 2 tsp saunf 1 tsp onion 2 chopped ajwain 1/2 tsp oil 2 tbsp whole garam masala 2 tsp aam ka achar 50 gms salt to taste red chilli 1 tsp big green chilli 2 Method Take 5 cups water add mutton or chicken whole garam masala,ajwain,whole jeera,saunf,dhania,ginger garlic paste,onion,salt and cook till its half done heat oil add boil chicken and fry it. Chicken white salan (memoni style) there are number of white salan recipes but this one is a classic hit in our homes do try it for once and cook it Ingredients 1 kg use chicken with bones it tastes better curd 1 cup 8 to 10 cashews onions 2 big or 3 medium cloves 4 badi elachi 1 small elaichi 2 cinnamon stick 1 small badiyan phul 1 or 2 green chillies 5 to 6 ginger garlic paste 2 tsp malai 1 tbsp coconut half piece salt to taste secret masala whole dhania 1 tbsp black peppercorns 1 tbsp cinnamon stick small piece Method Take slice onions and fry in oil till transparent most people use onions and grind it directly but I prefer to fry lil bit and then grind it, it tastes better once the onions are transparent allow it too cool then grind it into a fine paste now take some oil add ginger garlic paste and fry it in oil add slit green chillies add chicken now add the onion paste (I keep little fry onions and add in the chicken and then paste it gives a better texture to the gravy) now add the curd in a pan add whole dhania, black pepper corns cinnamon roast it nicely cool it and grind it coarsely add 1 tsp of this masala to the gravy, roasted jeera powder salt simmer for 10 minutes add coconut milk now grind cashews with malai add this to gravy and again cook for 5 to 10 minutes heat coal and smoke the gravy with that coal by placing the coal in a small vati add ghee oil or butter to the coal to smoke serve with naan roti or rice #memonikitchenwithshanu #foodporn #foodgasm #memonirecipes #bilkisfarooq #sanjarycookingclasses

Memoni Kheema masoor pulav Throughout memoni culture is the epitome in rice dishes this one is a simple yet delicious kind of a meal in india we all love rice and lentils which are nutritious as well as easy to make This one is a combination of pulav and biryani This recipe is my dads favourite and my mom cooks this one amazingly Ingredients Mutton mince or Kheema half kg Rice 500 gems soaked 8n water 4 onions finely sliced Tomatoes 3 to 4 finely chopped Whole garam masala Boiled eggs 2 to 3 Garam masala powder 1 tbsp Red chilli powder 1 tsp Cumin powder 1 tsp Ginger garlic paste 2 tbsp Haldi 1 tsp Masoor dal 1 cup soaked and boiled Green chill paste 2 tsp Potatoes 2 to 3 fried Tomatoes as per choice Method Boil rice with whole garam masala Boil masoor dal make sure the dal is not too soft Now make birista of onions Now boil kheema or cook it an a big vessel with birista ginger garlic paste cumin powder red chilli powder haldi tomatoes cook until there is no water in it and its nicely done Now mix the boil masoor dal with kheema mixture add 1 cup of water and again cook it till the oil seperates In a vessel aarange rice layer at the bottom then put the kheema dal layer in the middle layer pudina kothmir now again add the rice layer then again put some leftover birista kothmir pudina on top of it cook for about 10 to 15 minutes garnish with boiled eggs french fries and tomatoes Serve with dahi raita or dahi kachumber #memonikheemamasoorpulav #memonikitchenwithshanu #foodporn #foodgasm #memonirecipes #bilkisfarooq #sanjarycookingclasses

Coffee cake 4 eggs 2 heaped tsps instant coffee 225g softened butter 225g castor sugar 225g self raising flour 2 level tsps baking powder Preheat oven to 160°C. Grease 2X20cm round pans. Dissolve coffee in 1 tbl hot water. Put all ingredients into mixer and mix for about 3 -4 mins. Divide equally into pans and level out. Bake for abt 25 mins or until skewer inserted comes out clean. Allow to cool in tins for about 10 mins. Frosting 100g softened butter 300g sifted icing sugar 2 tbls instant coffee dissolved in 1 tsp hot water 1 tbls milk Sandwich frosting in between cakes. Make a ganache by heating 1/2 cup cream with 1 slab dairy milk or bar one chocolate. Cool completely.
