Mala tikka boti with saucy dip Ingredients 500g fillet chicken cut in cubed (1-1/2 inches) 4 tbsp yogurt 4 tbsp cream Salt 1 tbsp garlic ginger 1 tsp corn flour 1/2 tsp black pepper powder 1 tbsp lemon juice 2 tbsp coriander 2 tbsp green chillies (chopped or crushed) 1/2 garam masala 1 tbsp oil White Sauce Ingredients 2 tbsp butter 2 tbsp flour 1-1/2 cup milk 1/2 tsp salt 1 tsp black pepper 1 green chilled (crushed or chopped) 2 tbsp mint leaves chopped Method:- Mix everything together except of corn flour & oil. Marinate for an hour. Before cooking add in the oil and corn flour. Pierce the chicken cubes into the skewers. In a shallow pan add in 1 tbsp oil and add in the skewers and cook until done and you have nice grill marks on it. turn off the flame.Heat a charcoal untill it’s red in color , take a still bowl and place in the pan and pour 1 tbsp oil and close the lid immediately. Leave it for about 2 minutes. Then remove the still bowl. Method for the sauce:- In a saucepan heat butter, add in the flour braise still light brown, add in milk slowly and keep stirring as not to make any lumps. Then add in salt, black pepper powder , green chillies & mint leaves. Cook until it has thickened. Assemble:- Remove the chicken cubes from the skewers (slowly not to break them). Layer the chicken in a bowl and pour the white sauce on top. Note:- 1. if you want you can cook them without putting them In skewers. 2. If you put the oil when you marinating as it may close the pores of the chicken. 3. Serve hot as it taste better when the sauce is still hot.

Coconut halwa Chop fresh coconut in to tiny cubes add to a pot with 3 cups young coconut water or a mixture of normal water and coconut water will work just fine (I always end up making it with plain water only) add in 1 + ½ tsp agar agar pwd and enough sugar to sweeten mix well and boil on medium to high heat stirring occasionally to avoid burning . Let it come to a boil reduce heat and simmer on low for another 2 minutes pour ½ of this mixture in to a large pyrex leave it to cool in open air (I prefer doing this under the fan to quicken the process) while you prepare the next layer. Take 1 + ½ cup coconut milk add in sugar and 1 tsp agar agar pwd mix boil and pour it over the 1st layer using a spoon to pour in slowly be very careful not to pour through the 1st later let this set as well then pour the last layer (½ of the 1st one that we had saved) let it chill in the refrigerator until firm for about 30 mins or an hour slice and serve cold. Oreo delight 2 large packets of Oreo biscuits 1 can of fresh cream 1 tbls melted butter 1 Dairymilk chocolate Condensed milk to sweeten if needed Method: Crush/coarse powder 1 and a half packet of Oreo biscuits and add 1 tbls of melted butter and set aside. Beat cold fresh cream until it double the size then add the crushed Oreo , melt Dairymilk chocolate add to the cream and beat until it's all well combine , add Condensed milk to sweeten if needed (be careful to not over beat as it will spoil everything) Take the other half of Oreo and cut it in big chunks and put it in the cream and mix it with a spoon. *If it's too runny, and it's not a Mousse consistency then dissolve 1 tsp of gelatine powder in half a cup of hot water. mix and and add it into the Mousse. *If there is no gelatine powder then add 2 tbls of melted butter Decorate as desire. Yesterdays iftaar throwback Crispy chicken chinese n grill style Caramel custard with jello Falsa melody Recipe of crispy chicken For recipes Chinese n grill style crispy thread chicken I am sure people living in mumbai love this appetizer my little brother junaid is so fond of this chicken that I just cant explain his love for this epitome and my mother tried about zillion of recipes to.make this copycat Secret tip to get this same as they do marinate for 3 to 4 hours and cover with lots of samosa patti strips 500 gm boneless chicken (preferably breast pieces) 1 tbsp ginger garlic paste 2 tbsp red chilly paste 1 tsp red food colour 1 tbsp vinegar or lemon juice 1 1/2 tbsp maida (all purpose flour) Salt to taste Oil for frying Samosa Pattis (I use Switz and khushboo samosa pattis which are readily available in all general stores both are great) Method: Cut the chicken breast pieces into long strips around two inch long half inch wide. Wash and drain well. Squeeze with the palms of both hands to remove extra water. No water should remain in the chicken pieces. Place the chicken pieces in a bowl. Put salt, ginger garlic paste, chilly paste, red colour, vinegar in the bowl and mix it well. Keep the bowl containing chicken pieces in refrigerator for 4 to 5 hours so that the chicken pieces get properly marinated. On the other hand, take a plate and cut the samosa patties into long strip breadth wise. Thinner the strips the better will be the taste of the patties. Keep the cut samosa pattis in a plate, this will be used to coat the chicken pieces. After 4 to 5 hours remove the bowl from the refrigerator. Add maida to the bowl and mix it well. Now remove each chicken piece from the bowl and coat it with samosa pattis kept in the plate make sure pattus cover the chicken nicely and again keep in fridge for sometime and heat sufficient oil in a wok and deep fry the chicken until crisp and golden brown. After the pieces are deep fried, you can remove extra oil by placing them on tissue paper. Now the crispy thread chicken is ready for serving. Swissroll chutney delight kabab 1kg chicken fillet 2 cubed onion 2 tblsp ground almonds 2 tblsp dessicated coconut (powdered) 4 slices bread soaked in 1 cup water (squeeze the water out before grinding it with the mince ) 1 tblsp garlic paste *mince everything together* Now add in Salt 1/2 tsp black pepper 1 tsp jeeru (cumin) powder Green & red chilli paste Chopped spring onion Chopped coriander *mix it all well* Green chutney *no exact measurements* Take about 2 cups fresh coriander Green chilli 2 tsp garlic paste Curry leaves 3 tblsp dessicated coconut 1 small green pepper 2 tblsp almond powder 2 tblsp lemon juice Salt to taste 1/2 tsp jeeru powder (cumin) *grind it all together and make a thick chutney* -Spread the mince onto a big piece of greased foil (grease with oil) - Now spread green chutney - Roll it tightly like a swissroll and lastly roll it with the foil -Bake on 180oc for about 30-40 mins When done open the foil and let the logs cool down.refrigerate for an hour before slicing -Dip the sliced rolls in egg and breadcrumbs -Fry on medium heat till golden Serve with any chutney of your choice #ramzanrecipes #footfetishnation #bilkisfarooq #memonirecipes #memonikitchenwithshanu

Got many request for this Caramel custard By Bilkis farooa Custard Base 300ml milk 4 medium eggs 2 n 1/2 tbsp sugar 1/2 tsp vanilla essence Caramel Sauce 4 n 1/2 Tbsp sugar 3 n 1/4 Tbsp water Place the sugar n water in small sauce pan. Over medium heat.keep stirring until sugar dissolved. Cook 10 min until sauce thickens. Now pour the sauce into pudding molds. For the custard heat the milk n sugar in micro for 1 n 1/2 minutes. Now add the eggs n vanilla essence. Mix well n strain the mixture. Now pour the custard into pudding molds. Place the molds in shallow frying pan. Add 500 ml water. Cook on high heat. Bring it to boil then turn the heat slow. Wrap the pan lid with dry cloth then cover the pan with it. Leave on slow flame for 3 min. Turn the heat off n leave for 15 min. Don't open the lid. Allow to cool them. Then keep in fridge for at least 1 hour. Marinate it with Salt Pepper Hung curd (thick curd widout water) Little oregano Freshly grinded ginger garlic & green chilly paste Finely chopped fresh coriander.. Marinate for 5-6 hrs Now add little melted butter to the marinated chicken and grill these tikkas... Just Before serving Take butter in a wok and add nice amount of finely chopped garlic and saute well but dont burn... Now add sum salt and oregano and fresh cream we use amul cream& just one slice of amul cheese u can also grate amul cheese on top it... stir this sauce nd off the flame... Supreme samosa with ziggie fries Boneless chicken (cubed) 250gm Sterling silver leaves as required Crushed red pepper 1 tsp Samosa patti in square 8 Jalapeno chopped 2tbsp Capsicum (Julienne) 1/2 Cheddar cheese 2tbsp Black pepper ½ tsp Potatoes 350gm Butter 1tbsp Ingredients- Flour 1 tbsp Milk 1 cup Oil 1 tbsp Salt 1tsp Method- First peel off the potatoes and cut them like we do for French fries. Then fry them in oil and your fries are ready. Keep them aside Take a pan, put oil 1 table spoon and sauté chicken in it with salt, black pepper and crushed red pepper. Take a separate pan and then put butter and flour and mix it and put milk. Mix all together and it will become thick. Then put cheese, capsicum, jalapenos, fries and chicken and mix it well and then switch off the stove. Now your filling is ready Now take the samosa’s patti and make a big samosa. One samosa will require 2 patti of samosa in square shape. We all love caramel custard during ramzan this one is classic hit for iftaari as well as for sehri Light and with minimal ingredients Cream caramel custard Ingredients Sugar 8 tbsp Water 1 tbsp In a heavy bottom pan dissolve sugar and water untill sugar melts and you get nice golden brown color I usually like golden brown color so I cook less time if u like dark color cook accordingly Pour this mixture into glasses For custard 5 cups milk 1 tbsp falooda powder 4 tbsp custard powder Vanilla essence Sugar as per taste Cook all this ingredients and bring it to a boil Allow it cool to room temperature Pour this mixture in caramel sauce glasses Decorate with cream chocolate amd strawberry #easydesserts #easydessertrecipe#memonikitchenwithshanu #foodporn #foodgasm #partysnack #bilkisfarooq

This one was a classic hit last ramzan and many were asking for a perfect recipe use good quality vermicelli seviyan and make sure oil is not too hot otherwise color will be dark Marshmallow kabab is a unique kabab un ramzan we all try to make beautiful dishes for our family and this one isba classic hit Marshmallow kabab Ingredients Butter 4 tbsps All purpose flour4 tbsps Milk one cup Cheddar cheese 1 cup Boiled noodles 1 cup Boiled chicken 1 cup Spring onions 1 / 2 cup Black pepper pd 1 tsp Crushed red chilly pd 1 tsp Chilly sauce 1 tbsp Green chillies 5-6 finely chopped Handful of coriander leaves chopped Salt to taste 2 eggs well beaten Vermicelli for coating You can add sweet corn, mushrooms also (vegetarians can skip the chicken and add rest of the ingredients ) and make a cornflour batter for coating instead eggs Method Take 4 tbsps butter in a pan add all purpose flour stir well add milk. Make a white sauce add cheese when it starts thickening add noodles and chicken. Mix it well add crushed red chilly, black pepper pd, green chillies, chilly sauce, coriander leaves and salt to taste. Add little milk till it becomes spreadable consistency. Spread this kebabs mixture on greased tray and keep it in freezer for 2 hours then remove it and make cuts so that they can be removed easily for frying.
